One of the highlights of my family visit was this modified version of my mom’s awesome pumpkin dip. Traditionally the recipe is filled with powdered sugar and is not quite the most health friendly treat. But with a few simple new tweaks, the dip is practically calorie free and though it is not for the organically inclined, it is swimsuit friendly.
Linda’s Pumpkin Dip
- One 8oz cool whip
- 1 box instant vanilla pudding
- 1 tsp. pumpkin pie spice (nutmeg will work in a pinch)
- 15oz canned pumpkin
- Gingerbread men or graham crackers
- Thaw cool whip. Mix pumpkin, dry vanilla pudding mix, and pumpkin pie spice.
- Fold in thawed cool whip and serve.

Mmmm! I literally just made this! I am in a baking frenzy tonight and just happened to run across your website PLUS I luckily have all of the ingredients, so I thought, “Why not?” It’s fab! Actually, I substituted sugar-free Cheesecake instant pudding for the vanilla but it’s such a light flavor I figured it would work. It’s super good, Jess! Thanks for the recipe! Try it with apple slices! Even more weight watcher friendly! Honeycrisp apples work really well…

This is absolutely wonderful….light and fluffy. It is great with animal crackers for the children. I really like the idea of apple slices for weight watchers. Thanks for all the great ideas and information.
